Gorgeous Cupcakes for the Homebaker

chocolate and strawberry chiffon cupcakes

Versatile Vanilla Pound Cupcakes (sample recipe taken from the 'Gorgeous Cupcakes for
the homebaker' cookbook page 15)

makes approximately 16 two-inch cupcakes

Ingredients:
200g unsalted butter, cubed and softened
200g caster sugar (superfine sugar)
200g eggs without shells (4 eggs), lightly beaten
2 tsp vanilla essence
250g self-raising flour, sifted
8 tbsp milk or light sour cream

Method:
• Preheat oven to 180°C/350°F.
• Cream butter and sugar in a mixer till light and fluffy. Add eggs in a steady stream, then add
vanilla essence. Beat well. Stir in flour till just combined. Stir in sour cream. Do not overmix.
• Fill paper cases till 3/4 full. Bake for 18 to 20 minutes till light golden brown, or till an inserted
toothpick in the cupcakes comes out clean and slightly moistened.

Recipe Notes:
• To make a variety of pound cakes, add chocolate chips, dried cranberries, chopped
bananas, drained cherries or peach cubes to the batter.
• To make chocolate pound cupcakes, mix 50g melted and cooled baking chocolate into the
batter.
• For savoury cheese cupcakes, lay a slice of processed cheese over each cupcake before
baking.
• To make crunchy almond cupcakes, sprinkle chopped almonds over the cupcakes before
baking.
